ANÁLISE MICROBIOLÓGICA DE SUSHI COMERCIALIZADO EM RIO BRANCO, ACRE

O Brasil é um dos países mais diversificados no ramo gastronômico oferecendo vários alimentos diferentes aos seus consumidores, com base nos próprios pratos típicos ou provenientes de outras culturas. pescado trata-se alimento perecível que necessita atenções especiais em seu processamento. Falhas nas condições higiênico-sanitárias, associadas a não cocção do alimento, podem ocasionar uma contaminação e proliferação bactérias, o leva à grande preocupação nível saúde pública. estudo analisou os aspectos microbiológicos sushi comercializado na cidade Rio Branco – Acre verificando parâmetros qualidade as higiênicas sanitárias, comparando resultados obtidos legislação vigente estabelecida pela ANVISA. Foram escolhidos 5 estabelecimentos aleatoriamente, sendo escolhidas 3 amostras sushis tipo niguiri cada. As análises microbiológicas incluíram coliformes totais termotolerantes utilizando técnica tubos multiplos semeadura por profundidade para mesófilos Salmonella. Constatou-se todas tiveram crescimento bacteriano presença sugestiva Salmonella, tornando impróprio consumo mostrando falha higiênico- sanitária ao qual processado armazenado. É necessário maior fiscalização órgãos responsáveis cuidado vendem Branco, produto vendido seja boa cause malefícios quem consome.
